A taste of the good life

I am truely a seasonal eater. I think it's wrong to have a salad in December (that's why they make soups). Now, if I was in Florida or California, my mind might be swayed as they have fresh fruits and veggies year round. And, no, I am not talking about the store bought kind!  So tonight, we made a very seasonal meal that was delicious and I feel it is my duty to share it with you.
Apple Sage Pork Chops



Apple Sage Pork Chops
1 1/2 tsp rubbed sage                                          1 tsp. salt
1 tsp. garlic                                                                    4 Pork Chops
1 tsp. thyme leaves                                                    2 tblsp. olive oil
1/2 tsp. all spice                                                         1 md. onion, thinly sliced
1/2 tsp. paprkia                                                          2 red apples, thinly sliced
1 tblsp. flour                                                                 1/2 cup apple juice
                                                                                                1 tblsp. brown sugar
1. Combine first seven ingrediants in a small bowl. Sprinkle both sides of pork chops with some of the seasoning, rub it in, if you'd like (I did).
2. Heat a large pan, then add oil. Cook porkchops until browned on both sides. Add onions and cook for about three minutes then add apples. Cook until desired doness.
3. Stir in juices, sugar and remaining seasoning until well mixed. Put porkchops back in until desired doness.

Our side dishes included: Apple Stuffing and Green Beans. Naturally, a baked sweet potato would go well here too!
